Spinach Artichoke Grilled Cheese


This week is vegetarian week in our house. Earlier today my best friend sent me a link to this AMAZING Spinach Artichoke Grilled Cheese Recipe. When I saw it I knew this is what I was eating for dinner. I had almost everything the recipe called for too so I just made a quick stop at the grocery store on the way home from work and was all set.

Since Branden is working tonight it was just me and the Boogie and so I made two smaller versions of this recipe. Mine is for one person but if you want to make for two follow the recipe in the link or just double mine.

Let's get started

Ingredients:

Large handful of spinach, about 1.5 to 2 cups
2 garlic cloves
2 artichokes (I bought a can and just cut one up)
1 tablespoon olive oil
1.5 tablespoons light sour cream
1 cup shredded cheese mixture of provolone, mozzarella and monterrey jack
2 sandwich thins

Steps:
1. Dice garlic and cut up spinach and artichokes.



2. Add oil to a pan and toss in garlic, let it heat up for about 30 seconds to a minute then toss in spinach. Make sure to stir spinach around so it is coated with the oil. It will wilt and then it is time to add in the artichokes. Make sure the heat is on medium so you don't burn anything


3. Once the artichokes have heated up spoon in the sour cream and mix it in. Take off heat.
4. Put another pan on the burner and coat the pan with butter. Place half of each sandwich thin on the pan.
5. Sprinkle cheese on each half (save half). Then add your spinach and artichoke mixture on top of the cheese. Use the other half of the cheese to put on top of then. Top with sandwich thin top bun.

6. Grill each side evenly to crispy/grilled you like your sandwiches. I did one side slightly crispier then the other since the top of my sandwich thins have grains on them and I didn't want it to burn.


Since Maggie was also making this for dinner I asked her to send me a picture of hers so we could compare. We both agreed that adding some tomatoes would make this even more amazing.

It has been raining like crazy the past couple of days. It has actually been a surprisingly good thing for me. This weekend I had planned to get some major cleaning done and that included throwing out a bunch of stuff. I decided to focus my attention on our bathroom. Before I get into what I did I must explain our house. We live in a house that was built in the 1970's. My Grandpa bought it and him and my Dad fixed it up and added onto it. It is a 3 bedroom 2 bathroom home. It is basically split in half with the back half being a bedroom, bathroom and a living room. This part of the house is where Ace's room is and we made the living room into our bedroom since the rooms are super tiny. The other half of the house is another living room, kitchen, bathroom and 2 bedrooms. Our roommate has one of the bedrooms and his own bathroom and the extra room is an office.
We had planned on buying a house and were holding off on doing any type of updating or redecorating until we decided to stay here instead of buying a house since we aren't sure where we will be living when Ace starts school.
Long story short this decision sparked me to go into redecorating mode. I went on pinterest and pinned some of my favorite bathroom ideas.
My Inspiration
I saw this picture and was hooked. I knew I wanted yellow and some kind of blue in the bathroom. I had been surfing around Target and had seen these towels and so I knew this was it. I then went and measured different parts of my bathroom because I was going to need baskets, a new shelving unit of some sort and some type of shelves for the wall. I drew up an idea of what I wanted the bathroom to look like with all the dimensions (our bathroom is tiny so this was a must). We do not have a master bathroom but our tiny bathroom works for us for now while Ace is not using it for anything but bath time.

I then got the nugget ready and headed to Target. I picked the towels seen above, a matching shower curtain and a fabulous rug. I then grabbed 5 white towels, a set of washcloths (8) and 2 hand towels. The best part of all the white towels is they were $3.50 for each towel, $3.50 for 8 washcloths and $3.50 for the 2 hand towels and they were actually soft. Since I didn't want to spend an arm and a leg on towels I only bought 2 of the yellow ones as mine and Bran's main towels and those were each $12.99. 
I then went over and got a cute soap dispenser that was so shabby chic and cute. I was walking along the end caps (always do this no matter what, you find sales) and came across a shelving unit that was down to $13.95 from $19.99. I sat there debating on whether to buy it and figured I could buy it and if need be return it if I didn't use it. I then bought a set of three floating shelves, hooks (didn't end up using), a long skinny basket for over the toilet, a magazine basket and 2 plastic storage containers for under the sink.  

I also had bought some fabulous retro items for the kitchen since that is my next project and my total for all of the bathroom and kitchen stuff was about $250. I knew this had to turn out well or else my husband was going to be really annoyed with me spending that much money. Did I mention I was surprising him, haha. After hours of cleaning, taking EVERYTHING out of the bathroom and throwing out a ton of crap I was ready to get my bathroom overall started. It took all day because Ace was trying to "help" by eating all the boxes that I was recycling. In the end I am incredibly happy with the way it all turned out. I am totally in love with it.

As you can see our bathroom was in need of a major face lift! It was dingy looking from Tanner getting into the bathroom after we would take showers and his paws would get the rug dirty, the baby's stuff was everywhere, it needed a deep cleaning and it just was so unorganized and messy from neither of us being home much to get it all done. It felt so good to really get in there and clean and organize it.

Starting tomorrow I am going vegetarian for a week. I actually started today but tomorrow Branden and our roommate Daniel will be doing it too.
Tonight I decided to make kale chips. I was told about them by my friend Dolci and saw them all over pinterest. They turned out pretty good but I think I added too much oil. They have a bit of an after taste but overall are a pretty good snack.
First I pulled the leaves from them steam.
Then I put them in a mixing boil and cover with oil, salt and garlic powder.
I laid them out on a cookie sheet in a single layer.
I set the oven to 350 and cooked them for 13 minutes.
Simple enough!

I have a lot of friends who are pregnant or have babies and are giving cloth diapers a try. I know for me there was so much information out there that it made my head spin. I decided to write a blog with pictures and give a crash course on Cloth Diapers. I am by no means an expert and credit a lot of my knowledge to my childhood bestfriend, Lauren, who sat on the phone with me for hours when I was pregnant explaining all the types of cloth diapers and products.
Since I am no expert I am going to only go over the diapers I have used and what I know about cloth diapering. I do not want to put anything out there that I myself have not used or experimented with.
First I am going to explain the basics of my cloth diaper stash. My stash includes:

Now you may be wondering why I have so many types of diapers. This is because the best advice I got was try a bunch of different kinds and see which one fits your situation best then stock up on that kind. You and your husband also might like different types of diapers as well. My personal favorites are the Flip diapers. The reason for this is they can be used from a very tiny baby to a very big baby. My son has skinny legs so it took him forever to grow into his Pocket diapers. With Flips we had no problems with leaking at the legs. Their inserts are also amazing. The best part about Flips is they have a place in the back and the front on the inside of the shell that holds the insert in place. Some either have them in the front or not at all which is a pain when changing a squirming baby and your insert starts shifting around. For quick diaper changes while I nanny I like the Pocket diapers. They are simple to get on and off without worrying about the insert shifting or taking the insert out and letting the cover dry. My least favorite diapers are the Gdiapers. I loved them when my son was super tiny but as he got older they leaked. I had a friend who had the same problem with her son. No clue why this was happening. I also had an issue with the velcro coming off on my green shell. I still use them at home but do not trust them when we are going out because of leaking.
